A very old tradition in East elbe country is the Merino sheep breeding. This is especially true for the breeding of merino sheep meat in the region, because in Köllitsch is the oldest regular herd of Saxony.
The merino sheep is a fine-wool sheep breed that originated in North Africa. In the High Middle Ages Merino sheep arrived to Spain, where she gained because of their great economic importance of wool. From there they came in 1765 as a gift for the electoral prince to Saxony. Placed under state supervision they acquired in the period following European importance.

The Merino sheep was highly appreciated for its fine wool. Each animal is between two and four kg of wool (for animals weighing up to top ten). The German Merino breeds is today the group of meat breeds of sheep assigned. However, you will be given on the basis of fine merino wool, a special position.

Before abundant 100 years keeping and breeding of Merino sheep on the farms and the domain Köllitsch and Packisch began. The domain Köllitsch was built at the beginning of the 19th Köllitsch Century through the acquisition of several farms and was until the end of 1945 in the family Petsch-Kunze. 1882, which already at that time in the state-owned domain Packisch first vaccination trials carried out among others in Germany against anthrax. Was the state of Saxony on 1 July 1992 acquired the state-owned farm Köllitsch, today it is integrated as a teaching and experimental farm in the Saxon State Office for Environment, Agriculture and Geology of the site and external training.

A threat to sheep farming is so far given as is necessary for the keeping and breeding with the aspect of wool and meat production under current conditions is usually not economically viable. That is why it is important to preserve this heritage and preserve it.

By the early 90s of the 20th Century there was a consequent change of breeding focuses on fertility, fattening and meat production and wool quality. With this approach, the connection to the top breeders in Germany has been reached. Priorities for the sheep are today:
- breeding / conservation of the breed merino sheep meat as a gene reserve,
- continuation of the hair sheep for breeding experiment with scientific support, dike management / landscaping,
- Working with modern herd management,
- courses for sheep farmers and examinations for master candidates.

One of the keepers of the traditions enshrined in Köllitsch, especially the teaching traditions of the 2nd Half of the 20th Century, the BBS Köllitsch association, which have joined many former graduates of the training center Köllitsch have.
